Quick, easy and yummy!  A Fort Mountain favorite! 

Blueberry Coconut Muffins

  Ingredients:

Makes 9 to 12 Muffins

             1 ¾ cups flour

            ½ teaspoon salt

            3 teaspoons baking powder

            2/3 cup sugar

            1 egg

            2/3 cup milk

            ¼ cup oil

            1 teaspoon vanilla extract

            1 cup blueberries

            ½ cup flaked coconut

Preheat oven to 375 degrees 

Grease muffin tins. 

In a large bowl mix the flour, salt, baking powder and sugar. 

In a separate bowl beat the egg. 

Add the milk, oil and vanilla. 

Add the liquid ingredients to the flour mixture. 

Stir just until the flour mixture is moistened.

 Carefully stir in the blueberries and coconut.

 Pour into the prepared muffin tins.

Bake in oven for 20 to 25 minutes.

Ingredients:

Makes about 20 pancakes (feeds 8-10 people)

             1 cup unbleached all-purpose flour

            1 cup whole wheat flour

            ¼ cup wheat germ

            1 tablespoon baking powder

            1 ½ teaspoons baking soda

            Salt (optional)

            2 eggs, room temperature

            ¼ cup oil

            2 cups buttermilk, room temperature

            6 tablespoons honey

            2 ripe medium bananas, peeled and mashed

            ½ cup finely chopped walnuts

            Maple syrup

            Vanilla, yogurt, cinnamon and additional bananas

 Preheat griddle or skillet  

In a large bowl stir together the flours, wheat germ, baking powder, baking soda, and salt to taste. 

In a separate bowl beat the eggs. 

Blend in the oil, buttermilk, honey and bananas mixing well.

 Stir in the nuts. 

Pour the egg mixture into the dry ingredients, and stir just until moistened.

 Brush a hot griddle or skillet with oil.  Pour about ¼ cup of batter per pancake onto the griddle and spread to make a flat pancake.  

Cook over medium heat until lightly browned on the bottom and bubbles come to the surface.  Turn and brown lightly on the other side, 1 to 2 minutes.

Serve with sliced banana and a dollop of yogurt on top.

Here are a few things to think about before you make your reservation for a mountain getaway!

ON SITE STAFF!

Many cabin rental companies are property managers, not owners.  Some may not even have an office!  You never come face to face with anybody; it is by phone or email.  You are given directions and a key code and that’s it!

What happens if you have a problem?  What happens if you get lost?  What happens if you can’t figure out how to work the TV?  Nothing.  Most of these companies are open 9-5, Monday through Friday; unless your vacation is keeping banker hours, find somewhere that has on site staff available for you.

SECLUSION!

Make sure that you ask plenty of questions before booking your cabin.  Many cabins are located in residential areas.  That’s not a getaway, that’s a house swap!  You want privacy and seclusion (do you really want to hop in the hot tub with neighbors ten feet away?) and you deserve it!

SECURITY!

Going along with seclusion is security.  Who are those neighbors anyway?   They could be anyone, and by renting a cabin for a week next door to them, anything could happen!  Know where your cabin is before you book it!

NO HIDDEN FEES!

We all hate hidden fees, yet many rental companies have them and don’t tell you until after you book.  Processing fees and reservation fees are the top two hidden fees.  Usually it is a set amount ($25) but sometimes it can be a percentage (5%) and that can add up quick!  99% of cabin rental companies will have a cleaning fee, that is expected; but there should not ever be any other fee at booking time!

Ask plenty of questions and know where your cabin is and who you are dealing with.  If they are a large management company, consider looking elsewhere.  They don’t care about you as a guest; they care about renting the cabin for the owner.

This year marks the 39th annual North Georgia Apple Festival in the quaint town of Ellijay.  The festival runs the first two weekends in October 9am to 6pm on Saturday and 9am to 5pm on Sunday’s.

What is the apple festival?

It’s loads of fun!  That’s what it is!

Juicy apples, apple butter, apple candy, apple pies, apples apples apples!   Gilmer County is the apple capital of the country, so what better place to celebrate then in Ellijay GA!

You’ll find yummy foods (not just apples!), fun activities for the whole family and handmade and handcrafted items, as well as many on-site demonstrations of how selected types of crafts are made.

Looking for some entertainment?  It’ll be there too!  Everything from cloggers dancing away the day to rock and roll and country music!  Pony rides, bounce houses, rock climbing walls and more for the kids and plenty of shopping for mom and dad.

There is also a parade and antique car show each year. The antique car show is held at the Civic Center on October 9th. The parade is on October 16th and begins at 10 A.M.

Make sure to wear your walking shoes – there is so much to see and do, you’ll be on your feet for most of the day; but it’s well worth the exercise!

If you plan on being outdoors a lot in the warmer months it is a good idea to bring sunscreen and bug spray.

Around the Kitchen
Kitchens are stocked with basic cookware, cooking utensils, plates and cups, one roll of paper towels, coffee makers, microwaves, toasters and manual can openers.

If you want to cook something requiring a special utensil such as a basting bulb or brush you should bring your own. If you need very large cookware or storage containers for leftovers, tin foil or zip loc bags you should plan on bringing some along.

Food and condiments are not stocked in the cabin.

Grilling outdoors
All of our luxury cabins have gas grills with the gas tanks supplied by Wilderness View Cabins.

Towels and Linens
Plenty of bath towels and wash towels are supplied in each of our cabins as well as pillows, linens and blankets for all regular beds. This starter supply should be more than enough for 3 or 4 day stays.

Laundry
Cabins that have washing machines do not have laundry detergent so you must bring your own. We suggest buying a small travel size.

Telephones
All cabins have a telephone where you can receive phone calls or call 911. Bring a calling card for outgoing calls you wish to make. All of our cabins have local calling service.

Cell Phones
Cell phone service is spotty and can vary by season and weather conditions – the same for cellular internet service.   You will be given your cabin phone number at check in and we suggest sharing it with your family and friends at that time.

Internet Service
All of our cabins have wireless internet for your convenience.  These cabins do not have computers for your use so you must bring your own – preferably a laptop.

Your computer must have a wireless card for it to work properly.

Clothing
Although the Blue Ridge Mountains have very moderate temperatures, as with any mountain environment it can get very cool in the high altitudes even in summer so be sure to bring rain gear and warm clothing.  You may wish to bring a robe for the outside hot tub, especially during the colder months.

Gilmer County Fair will be here August 10 – 14, 2010 at the Ellijay Lions Club located at 1729 South Main Street in Ellijay, GA.

Join in the fun and festivities of carnival rides, games, craft and livestock exhibits, entertainment and tasty food. The fair will be open from 6 PM to 11 PM Tuesday through Thursday, and 6 PM to 12 Midnight on Friday and Saturday.

Admission is $3 for adults, $2 for students, children under 10 are free.

Ocoee Rafting, just a short drive from our cabins, has been in business since 1976 and uses only highly experienced and trained river guides for your safety and enjoyment.  No experience is necessary and they supply all the needed equipment for your rafting adventure.

Rafting season runs the third weekend in March through the first weekend in November. Getting wet on a rafting adventure is only half the fun; doing everything you can to stay in the raft is the other half. 

Take a soak in your cabins hot tub to relieve your tired muscles after a day on the river; a rafting adventure in the North Georgia Mountains gets no better!
